need a gourmet dinner idea

This weekend the kids will be off doing a babysitting gig, so I need a nice dinner idea, Egg-related or not, to cook up for Mrs. 500 and myself.  We know our way around the kitchen, and follow recipes pretty well.  We like to riff on dishes to make them our own, and like experimenting.  Any cuisine.  I've looked around Saveur and Food Wishes, and got a few possibilities, but not sold on anything yet.  Suggestions?

I've been doing Coq au vin and Boeuf Bourguignon a bit lately. Had forgotten how good they are and really nice for cold weather. Osso Buco is great too.

Definitely agree with the tuna steaks. Beef wellington is always nice but if your looking for something different this crusted pork butt is actually really good. The crust is awesome on thick chops as well and is something you can play with.  We had this with pumpkin orange soup and beet chips.

I second the vote for osso buco. How about veal chops?

I made SV lobster tails with lobster oil some time ago. The tails were not bad, but I think the oil had really turned out well.

If you pick a protein, it may make it easier?

Lots of cocktails, Taco Bell and go at it like 2 hamsters in a sock. Rinse and repeat.

Not really gourmet. Actually Thai street food, but this recipe for chicken (game hens) is really good.

See here. Needs lemon grass, which may not be easy to find depending where you are. A much lesser amount of lemon zest might work.

Again. not gourmet, but try salmon tartare if you can get really good fresh salmon.

Made Coq au Vin years ago. Was good, but it was really Poulet au Vin. Never seen a little Coq, which I understand has a different flavor.

Hmm, come to think of it, don't know if I've made or had "gourmet." For me, gourmet has tended to mean "has a French name." Like Vichyssoise or Quiche Lorraine. Aka, potato leek soup and egg custard pie w. bacon.  Or Croque Madame, otherwise a grilled ham and cheese sandwich w. a soft egg on top. Mmmm.

We did Coq au Vin last time. I think Osso Bucco is it. Only had it in a French restaurant. Never made it at home. Although the Taco Bell meal sounds better.

It's pretty easy and you can make it with whatever sauce/braise you want. Get the shanks cut thick and tie them with twine so they don't distort when you sear them. Red veal has more flavour for this.

Momofoku's Bossam is different and delicious. The ginger scallion sauce I could eat by itself. http://cooking.nytimes.com/recipes/12197-momofukus-bo-ssam Could easily be adapted to the egg and would likely be good with some light wood smoke.

Hard to beat Osso Bucco with risotto and a big red wine. Although an APL cowboy ribeye and a baked potato with BBQ sauce might get my vote.

Ropa vieja is easy and will change your life.  You'll be doing the things with mrs 500 later that night.

Thanks for the suggestions.  I pinned all your ideas.  Gonna call around to order veal or beef shanks for Osso Bucco for Saturday night, and then do The Things!

Thanks all for the ideas.  It was Veal Osso Buco over Polenta.  Very tasty.  Two new things I'd never cooked before.  Paired with a Chardonnay beforehand and a Petite Syrah during, and then a dark chocolate brownie, with what you call a Brunette Russian (bourbon, Kahlua, amaretto, milk).
