Need advice on Pork Belly

I have a few 3# bellies that came with a half hog I bought. I'm restricted to absolutely no sugar or flour in any rub. Honey is Ok, but not Maple syrup, though. Any suggestions?
I wanted to try bacon, but all of the common recipes require either sugar or Maple syrup. Both are show stoppers for me.

I don't see a reason not to omit any sugar from a bacon making recipe. Substitute a little honey instead. Try it out on one of the bellies. I bet you'll enjoy.XL BGE, 22" Weber Red Head, Fiesta Gasser .... Peoria,AZ
