I had the slicer set up so thought I'd do the veggies... nice.

Took the beef off at 125, let it rest and threw it in the freezer for a while. Sliced as thin as I can with my slicer. Warmed later in a au jus mix.

Toasted hoagie, a lot of swiss cheese, sautéed red peppers and onions. Pretty Damn good sandwich.
