Rack of Pork Steaks (Dayum this was good)

I saw @Austin_Eggheads post cooking a two bone Pork Steak and had to try it. 
Went to Costco and bought a Rack of Pork 8 bones, cut into 2 bone steaks and cooked 3. I rubbed one with Fat Boys Rub (#1 Sons favorite) Rubbed the second for SHMBO with Williams Rib Tickler and the third with Williams Cajun for me. I filled the Mini Max with a OO and got it to 350 and cooked the three double rib steaks for 50 minutes until they had an internal temperature of 145. Then cooked some asparagus on my holed frying pan with the closing handle which just fits the Mini Max. This was the most tender pork I have ever eaten, I have been cooking on the egg for a long time and these were unbelievably good. I can't thank Austin_Egghead enough for posting about this, it is definitely a must try for anyone who likes pork.

    Thank you all, this really is a must try and they weren't that expensive I paid $17.50 for over 5 pound rack. I got 4 huge 2 bone chops out of it.

    Funny this is the second Costco rack of pork post I have seen today.  I went to Costco and got one today also!  Coincidence.

    Thanks - looks great - and I am looking forward to cooking mine next weekend.  

    Anyone cook these as a whole rack?  Without cutting them into chops first?

  • Awesome! I had hot dogs, left over from yesterday's grandson's BD - damn I feel so inadequate...

    @lakewade - yes, we usually do them as a whole rack - like Prime Rib only pork . This one had about 30 minutes to go - no finish pics....

    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

    Indirect - this one had a large fat cap, the spooge pan on the setter waget temp was around 350ºF.
