DizzyFest Cooks

Just thought I'd share a few photos from my day at DizzyFest.  Unfortunately I did not get too many in-progress pics.  The crew at DizzyPig put on a good show.

1) Started the day the a Mexican Egg Casserole.
12 Eggs
1 cup (or so) Cheddar Cheese
Milk
Fajita-ish
Salt
Mix into a casserole dish @350 Indirect for about 1 hour.  Make sure a toothpick comes out clean.

2) Pineapple Head Punch
I did this one because it was cold and thought a warm drink would be appreciated.  It got lots of positive comments.
8 grilled oranges juiced
4 grilled lemons juiced
enough apple cider to round up to 1 gallon
2 cups sugar
3 tablespoons Pineapple head
Everything goes in a dutch oven and simmer for 15-20 minutes.

3) Asian Lettuce Wraps
We doubled up the filling recipe at made 5x the sauce.   We skipped the ginger and garlic and just seasoned generously with Tsunami Spin.  Went with Endive leaves for easier serving.

4) Filipino Pork BBQ
Need to circle up with the Mrs. on the recipe.

5) "Old Fashion" Tea Cakes
Used the Old Fashion Drink as inspiration...
1.5 cups flour
1 tsp baker powder
1/2 tsp kosher salt
1/2 cup unsalted butter
3/4 cup sugar
zest of one orange
1 tablespoon fennel
1 tablespoon bourbon
3 eggs
1/2 cup milk
Scoop into grease mini muffin tins.  
Put half a maraschino cherry on top of each cake.
Indirect @350 for 18-ish minutes.

Syrup  (amounts were not measured)
Orange Juice
Bourbon
bitters 
sugars.

spoon syrup over cakes after they come off the grill.

    I'm sure the rest were great as well, but the tea cups were the only ones I got to try.
