XXL!
Got a XXL a couple weeks ago and we've been experimenting with it.
So far, we've cooked 70 lbs of USDA Prime boneless ribeye, 65 lbs of beef ribs (before and after), and pork shoulder.
Absolutely loving it!

Thanks for all the kind words.
Don't have any other eggs - this is our first.
We had 8 shoulders on at the same time, but I think it can hold more
I will keep on posting pics as we make more food. It has been so much fun so far... we're using it 2-3 times per week right now.
BTW... in case folks don't know... the absolute best place we have found to buy USDA prime boneless ribeye is at COSTCO. Buying it by the case is slightly cheaper (85 lbs or so)... but if you buy it uncut, it can be bought for a very reasonable (for prime) $12/lb

Is this a restaurant Egg? Looks like it's possibly being used indoors as well? Can you elaborate on this? Thanks for the pics!Steve

This is not a restaurant Egg. It is a powerplant Egg . I bought it for all of our great employees for all their hard work.
We're not really using it "indoors" per se. We have a gorgeous deck with big barn doors which make the indoors "outdoors"
Right now, we have 70 folks to feed, and we're experimenting with all the good stuff
-
Good stuff man! Quite the management team you have. I'm sure your staff feels very appreciated.Just a hack that makes some $hitty BBQ....

Yes, one person can handle the plate. We have gone through about 60 lbs of the lump charcoal on five 8-12 hour cooks. That has worked out to be about ~300 lbs of meatWe're going to do baby back ribs next. I will surely take some pictures to share.
