Thanks for those who chirped in on Friday when I asked about grilling oysters.  I had to do 8 reverse sear steaks, make Bloodies on the fly for 8 and entertain 7 people I had never met before.  The last thing I wanted to do was shuck a couple dozen oysters.  So I decided on grilling them open and then topping.

I made a topping with butter, garlic, sweated shallots, Col Pabst Worcestershire sauce and a parmesan romano blend.  I grilled the oysters open and put them on the half shell as quick as I could trying to reserve as much liquor as possible.  They were hot as hell and my hands were not stoked.

First I roasted the steaks to 120-

Then I got the oysters opened and dressed

They went on to the small at about 550F
After about 6 min, they looked done to meimage
Oysters were devoured immediately

Then I finished the steaks with a final sear and downed my beverage-image

I was so mesmerized by the oysters that I just noticed the steaks. Oysters and steak. It doesn't get any better than that my friend. Awesome combination.

After looking at all the post put up today I keep coming back to this one. Those oysters are killing me! Excellent looking meal. I'm forced to do this on quality alone.
