Dinner tonight: deboned chicken with prosciutto provolone and spinach

Not exactly a stuffed chicken, but it's deboned, and filled with prosciutto, provolone, and spinach. I folded it over and brushed with oil and sprinkled with salt. On indirect at 400. Dessert is to be a big apple pie sort of thing. Sliced apples tossed with vanilla, cinnamon, sugar, arrowroot and salt. Tucked into premise pie shells, in the CI skillet. Hope it doesn't burn. Finished pix to follow, unless I burn it What's everyone else egging tonight?

Boning took about 20 minutes. I realized part way through my knife was dull which makes it a lot worse! I follow the pepin YouTube video, which @NPHuskerFL‌ has linked to. Finished bird and sliced and plated:

Thanks all for the kind words! Apple pie in the CI for dessert. It was OK not great. It would have been better with some tart apples or rhubarb - I only had gala apples and it picked up some smokiness that didn't quite work.

Thanks for all the compliments! The prep takes some time but the difficulty level is not great. I think doing a good steak is a LOT harder honestly - such a short window to get it right. And don't even get me started with brisket.
