Cornish Game Hens with Clementines and Ouzo:

I am doing what I hope will be a really fun cook. This cook is the fruit from the seeds planted by my two new middle eastern cook books. The major ingredients are  2 cornish game hens, 6 1/2 tbs Ouzo, fennel bulbs, Clementines, orange juice, lemon juice, olive oil, thyme leaves, brown sugar, kosher salt and fresh ground pepper. When I saw the original recipe it featured chicken, but I was thinking quail. However, I don't have any more in the freezer and opening day here is not until Oct 3. This is a test cook with the hens, which are spatchcocked and split down the breast. Will post more pics during the cook and the results.
