OT- pickle brine?

Hey every one. I have been doing a lot of cooking. Just not a lot of posting this summer. OT but we are pickling most of what is left of the garden so far. Was wondering if anyone had a really good recipe for pickles. We probably have done 20 jars so far of just pickles this year with a basic brine. Looking for a change and to see if there was a really good one out there. Hope everyone is doing well. Take care.

    These are easy and great IMHO.
    Pickles, Refrigerator, Onions & Cucumbers, Richard Fl

    INGREDIENTS:
    3 Whole Onions, Sweet
    1 12 Oz. Malt Vinegar
    1 1/2 Tbs. Pickling Spices
    1 Large Cucumber
    1/2 Tsp. Crushed Pepper, more if you like them hot

    Procedure:

    1. In a large container with top, place sliced onions, cut about 1 inch by one inch. varies by size of onion. Peeled cucumber, sliced in half lengthwise and then into 1/2 inch slices.

    2. Place vinegar and pickling spices and crushed red peppers in container. If this does not cover the onions and cukes , add additional vinegar to cover. At this point you might want to use some balsamic, more malt, red wine and cider. Depends of your liking of different flavors of vinegar, all malt may be too strong for most people.

    3. Place in refrigerator for a week or 10 days. Shaking once or twice to move the spices around during that time period.

    4. Great on salads with tomatoes or just on crackers with cheese.

    5. They also may be skewered alternately and grilled for 10-15 minutes. Careful not to burn the onions.

    Thanks Richard. We are using jalapeño's instead of the pepper flakes in some. But I am going to try the flakes in a few as well now. Thanks again. Pretty much the brine we are using besides the onions. We have all the beens and carrots mixes with onions so far.
