Done chicken and ribs turned out Greta used the plate setter inverted but had to keep my lower opening about 3/4 of the way open and my upper lid about 1/2 way open to maintain 225. Does having the plate setter in the cooker effect the ability to gain high temps

No, vents set like that would be for +400ºF indirect. By inverted assume you mean legs up.Make sure your firebox opening is lined up with your lower vent and that the air holes in the firebox are clear. After you start your egg, drop in the setter and give it a half hour to an hour to reach temps.Calibrate your thermo as well, to make sure the temps are real.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

Yeah, search temp settings and there is at least one eggcellent post with photos of what certain temps should look like for both top and bottom vents. It's really well done.

there is a "search box" in the upper right quadrant of this page that has improved over time. In addition, use google and add big green egg to your query and you will get loads of hits.
