Put a 12 bl brisket on the egg drip pan filled with apple juice and water been on for 3 hrs at 190 f already at 151 internal wanted it done in about 15 hrs am I screwed my last one came out perfect a 4 bl in 10 hrs

Every brisket is different but you'll hit the stall pretty hard at 190.Just a hack that makes some $hitty BBQ....

thanks im going to bed its at 160 will set an alarm if it gos past 180 internal

Well its noon put the brisket on at 9 pm last night and all is good internal temp is 175 egg is sitting at about 210 and people coming over around 6.

You should be good. The water pan will lower the temp and slow the cook. Avoid the temptation to peek. My 12 lb was on at 8:30 last night and is now 193.
