Night before butt rub.

Options
I'm gonna put the rub on my butts tonight. Should I wrap it while in fridge or leave them open on a tray. I was thinking open could make the better bark.

    I always wrap mine. I have it in a pan and put a layer of plastic wrap over it. I would worry that leaving it unwrapped all night would dry the butt out.

    I also wrap mine, but usually unwrap for the 1-2 hours before cook when I let it get to room temperature.

    I leave mine in whatever packaging it came in. When the egg is about ready, I unwrap the butt and add the rub. Then onto the egg. Perfect bark every time.

    I hate it when I go to the kitchen for food and all I find are ingredients!
