Here is an interesting read on Serious Eats about opening a Carolina style whole hog BBQ joint in NYC and the economics of the endeavor.
I busted out at this line (when talking about how many BBQ places fill their menu out with more than just whole hog pork):
"The most cringe-worthy of these hog alternatives is beef brisket. Every time brisket shows up on a Carolina menu, God runs over a basket of sweet fluffy kittens with a Mack truck."
