Mini Ballotine

Mini in every way. Cornish game hen stuffed with duxelles. Cooked raised direct on the mini at 375* for 20 minutes. A tad overcooked, 172*. Used a sage, rosemary, garlic and salt rub I make every fall.

Incredible job on the deboning!!!!  It looks fantastic.  The first one I did looked like it went through a cheese grater.  LOL  Can't wait to try it again with something different inside.

All of y'all and your deboning! It's making the rest of us look bad, lol. I bought a chicken yesterday and am going to attempt a deboning tonight! I'm sure it won't look as good as your game hen though!
