My First Tri-tip & my first reverse sear

ZmokinZmokin Posts: 1,930
didn't turn out as well as hoped.  My reverse sear is more like a reverse burn.
However, after scraping off the carbon, the medium rare looks pretty good after I cut it in half, and then, once it was all sliced up, it came out much better than I expected after seeing the outside of the reverse sear so black.  Next time, I won't bother with going direct, I'll leave the plate-setter and just crank up the heat.  so next time it will be a smoke to 120 internal, crank up the temp and pull at 135.
