Beef back ribs

So I've tried beef back ribs twice now to less than stellar results. Hopefully this will be different. I'm going 300- 325 for three hrs. Just got some raising the steaks, so they got a liberal coating of that and dizy dust. Also well be trying webers sauce. Oh and two chunks of apple wood. Never done apple with beef so that's also an experiment. Hopefully well come close to the ones we had in our cooking class Thursday night.

Hey Jeremiah and John. There will be one at Fireside for ribs this Tuesday night. You need to join they're mailing club and then signup for the tickets. I can't go because I have some one flying in from Boston. I seen the Pete Alewine one but looked like it cost $10 to get in? Great looking cook on the ribs by the way... I'm sure they were tasty with those rubs.
