I would stock up on drumsticks and thighs, repack into meal size portions, food saver and freeze.

I don't know but I found a 3lb angus choice rib roast for $8/lb the other day.

I haven't yet - just ran into it by accident the other day.  I have a pork butt and some beef back ribs in the queue first.

Last rib roast I did a reverse sear (I did it for Valentine's Day and it was much more expensive) and it came out amazing.  I will probably do that again.
