HELP.....Brisket Temp Going Backwards

Cooking whole brisket, temp rose to 200 and I thermo-pened. Wasn't quite done in some spots. Internal was 195 and not like butter yet. When I checked it was wrapped in foil. Since that time the temp has gone backwards. Been checking every 30 mins. Now reading 182 in both thermopen and maverick.....what's the deal?? Back wrapped in egg. Temp at 260. Meat also seems tougher now than before.

Just meant its back in egg now. Only briefly took out for temp check. 2 mins and put back in.

Did your fire go out? 270 could be the ceramics holding heat and the fire is out.

Bump the Egg temp up to 350 to finish. If it's still tough it's not done yet. If you can get the Egg temp up your fire is fine. If it won't, as above, your fire may be out.__________________________________________It's not a science, it's an art. And it's flawed.- Camp Hill, PA

My fire was fine. Temp rose again and it was actually one if the best brisket do have done. Especially the point, It was great. No idea why that temp dropped like that. It was weird for sure.....

Had that happen to a bone in pork butt this weekend. I thought I timed it about perfect as I wanted to pull around 5 pm and at 4 it was at 192. At 4:30 it was at 188. Thought FML and foiled it.NW IOWA
