So after the flooding rains from yesterday, I've got 3 racks of ribs smoking for a family event tomorrow. 250 degrees, 2 apple & 1 cherry chunk. Ribs were prepped with French's Mustard and then Dizzy Dust as the rub choice. I've got a pan of apple juice for some flavored steam. I plan a 2.5 to 3 hour smoke then foil for an hour or so and finish with Sweet Baby Rays.

Be careful with the liquid in the pan. It will hold the temp down to 250* until it evapourates and, if your vents are open too much your temp will skyrocket.
