250 indirect for 1 hr then bumped it to 350 far another hr then pulled the plate setter and opened it up to 550/600 and seared direct for a couple minutes a side. Came out great.

I failed to mention it was 2 8 lbs cut in two that I did brine and also used 3 chunks of Apple, it was worth it...
