Giving Egrets ham a try today. Injected with maple syrup then rubbed with a paste of Jack Daniels, maple syrup, vegetable oil, onion powder, ancho chili powder, salt, pepper, and paprika. Smells awesome.

Smoking with apple chips and cherry chunks.
