    Indonesian Sate

    Ingredients:

    • ½ lb unsalted butter

    • 1/2  Cup Thai sweet chili sauce or to taste

    • ½ Cup chopped onion

    • 1 Cup naturally brewed low sodium soy sauce

    • ¼ Cup grated ginger

    • 1 Cup kecap manis (Indonesian sweet soy sauce)

    • ¼  Cup lemon juice

•1 Cup low sodium teriyaki sauce

    • 1 zest from 1 lemon

    • 30 or so bamboo skewers

    • 6 Clove garlic (rough chop)

    • 2 pork tenderloins

    • 2 Tbs or more hot chile flakes

    • Kecap Manis = equal parts molasses, teriyaki and soy sauce

    • 3 Tbs coriander seed

    • bunch  coriander/cilantro leaves as garnish

    • 2 Tbs cumin seed

4 or 5 stalks lemongrass chopped fine, white tender part only

    • 1 Tbs mustard seed

6 or 7 kaffir lime leaf chiffonade and fine slice

    Instructions:

    Soak skewers in water
Toast coriander, cumin chili flakes and mustard seeds in cast iron pan until fragrant (pungent). Break with mortar and pestle into large pieces(you will sneeze and cough some in this step).
Melt butter in saucepan and cook onion, garlic, ginger, lime leaf, lemongrass and lemon zest over medium heat until onion is transparent.
    Add spices, lemon juice,
teriyaki, soy and kecap manis and low boil 15 minutes. Allow to cool to room temperature
Remove membrane, silverskin and excess fat from tenderloin. Cut the “tail” piece off about 2”.
Cut pork diagonally into pieces and about ½” cm in the middle and wider where the tenderloin is narrower. Lay meat out between plastic sheets and pound out to ¼” thickness.  Pour ½ the marinade into a glass pan, layer pork pieces cover with remaining marinade. Move meat around so all is coated in marinade. Cover with lid or plastic wrap and marinate two days refrigerated. Shake or move container a few times during the marinade.

Skewer pork pieces. Reserve marinade. Adjust BGE to 350*. Place skewers on grill and close for 4 minutes. Open dome, look for even browning on pieces, turn and rearrange if there are hot spots. Cook for another 3minutes and check colour for doneness. Any sates that are not brown and caramelized can be finished with the dome open. If desired some of remaining marinade can be used for a glaze.

    Notes:

Serve satay as a meal with rice and salad with a little of the marinade drizzled over the rice.
Serve as an appetizer with spicy cashew/peanut sauce

    25 to 30 skewers

Can use white or dark boneless, skinless chicken or tender beef as well.

Cooked most of it at the meat and greet and 50 or so at the fest. Just put the curry up in another thread cause I'm using IE and it does not like the forum.

If you can still smell lamb over the amount of spice that was used on those two cooks, Cali and I screwed up bad. From the spillage I think you got the one that HA used for the chicken salad and love bombs. The chicken salad kept falling through the grid til we convinced the inbred to cook the chicken whole and make the salad in a bowl. The drip marks on the side were the satay sauce leftovers

I'm sorry. Did I actually ask you to cook them. There were loads of guys doing them but you seemed to just take over. I blame Henapple.

I distinctly remember a point where you pulled out a bunch of meat, made sure you didn't get too close to an egg, and said something like "Here! Put these on, will ya?"

And for that, I am adding raisins to your jambalaya next time.

Awesome recipe Steve!  Is this similar to what you cooked in Toronto last year?  That was great!  Are we talking inches or whatever cm stands for?

I modified it a bit Fred but essentially the same. I took a load down but there wasn't much food at the pre-party so I cooked most of it there. :^o

Too late to fix that now. I printed the recipe in Canuckese and quickly converted it to 'murican today. Wanna make a bet on tomorrow's game?

Wings/Leafs or Tigers/BJays?  Both match-ups are happening tomorrow.  I assume you mean Wings/Leafs.  I was looking at the injuries of both teams.  The Leafs have two (Bernier & Bolland).  The Wings have 11 (Abdelkader, Jurco, Andersson, Gustavsson, Helm, Cleary, Datsyuk, Samuelsson, Zetterberg, Weiss & Coetzee).  The Wings are looking to break their 23 year consecutive playoff appearance streak this year.  No thank you.  You're a crafty devil!

Hey, do you mind that I'm re-gifting a bag of Maple Leaf you gave me to Henapple?  It got lost on the shelf and I just found it the other day.  I think it's my favorite lump, but I wanted to share it with the PBR swiller.  I'm meeting up with him next month and getting 10 bags of OO.

Total score of both games. C'mon man the Jays are sucking this year. (although it is the exact same team as was picked to win the big one last year). I'm coming to see Henapple when he brings your lump. You can pay me then.

  • It's against my better judgement, but since you're coming over the water, I'll oblige.  Same deal?  Rubs and sauces?  If I lose, I'm gonna cry about the Tigers playing with a split squad.  Just sayin'.
