Roasting peppers. When finger say hot the chiles are ready

Sofreto (tomatoes, yellow bell pepper, red Fresno, garlic, bay leaf , carrot, onion, squash) all in the vitamix for a spin.

The liquid was separated from the solids.  Solids into the meat mixture, the liquid into a pan to reduce for soup

Decided to take a page out of Molly’s book with the leftovers.  Sliced smoked goat cheese, layered meat over the cheese, added tomatoes.  Last minute decided to sprinkle some lemon pepper on the tomatoes. ……. And then it happened the cap came off!!! Now the sandwich is blanketed in lemon pepper…Well, at least, I had not yet wrapped it with the bacon. Went out for a hamburger….just not the same ;-(
