Decided I couldn't go wrong with a few steaks...2 ribeyes and a sirloin tip (kids love these). Dusted mine with @mickeys coffee rub and sealed em up. Dunked for about 4 hours at 135...then finished on the XL at about 650 dome temp for 60 seconds per side...rested for about 10 minutes then had the most tender steak ever...
About half way thru I tossed in some Brussel sprouts with butter and garlic...but the temp was too low (looks like ideal is about 180 for an hour...next time I'll do those first).
All in all...good first outing...I'm hooked.Making the neighbors jealous in Pleasant Hill, Ia one cook at a time...
