Snowpocalypse 2.0 Brisket

Greetings friends,
Weather adjusted my work schedule, so this brisket goes on a week early. I'm going for a franklin level cook here - so just salt and pepper and what I'd consider a heavy trim. We shall see.
On the LBGE at 225* with nothing but Rockwood, mesquite, a garlic pepper water bath, and some Trampled By Turtles ...
Also trying that water bacon method. Not done yet, but I'm not convinced.
And an obligatory pic of the snow and now, sleet. Smoke on, my people!

Peach brandy isn't for everyone but it'll keep you warm on a cold night. Also, hate to see the game postponed due to weather. Not sure that flag has the right color blue though! I'm kidding, will be a fun game to watch! I've not done a brisket yet so ima watch for your outcome here..Stuart

Had a really really hard time stabilizing the temperature. LBGE kept bouncing from 190 to 300, and I was shooting for 225*. Added the rain/snow hat to maybe cut that factor out but no help. Very strange. I think maybe I just haven't dialed in the new settings now that I have the Hi-Q grate. Anyway. Here's a pic of the best tasting brisket I've had so far. Had to pinch a piece before the FTC. Thanks for checking out my thread!

I think that cut was with the grain. But it was the blackest corner so I went for
Flavour.
I always draw the knife tip a little with the grain to just break up the silver skin a bit. Don't know if that does anything. I imagine the flavours penetrate better.Large BGE and Medium BGE

So UNC made it to Atlanta in gridlock, but dook can't make it 8 miles? My my conspiracy theory isssssss, K didn't want to play in front of 23k students (kind of like cameron but X 100) so they took a dive. I will believe that to my dying days.
Be careful when following the masses. Sometimes the M is silent.
