Snowpocalypse 2.0 Brisket

Greetings friends,

Weather adjusted my work schedule, so this brisket goes on a week early. I'm going for a franklin level cook here - so just salt and pepper and what I'd consider a heavy trim. We shall see.

On the LBGE at 225* with nothing but Rockwood, mesquite, a garlic pepper water bath, and some Trampled By Turtles ...

Also trying that water bacon method. Not done yet, but I'm not convinced. :)
