mixing pecan chunks with lump for wings

Have to cook 30 wings Friday for a party. Going to soak them in oak ridge game changer brine and then secret weapon rub them . Plan on using a chunk or two of pecan with the lump. Do I mix the pecan chunks in with the lump and then start the lump and bring everything up to temp . Or bring the egg up to temp and then toss two chunks of wood in.. If I mix the wood in with the lump from the git go won't the wood smoke and burn up before the wings go on or get done

Chicken takes on a lot of smoke. I would light it, get it to temp, then add one chunk on top of an area you lit.XL BGE

Just throw a chunk on top when you get ready to put them on. Be careful, they'll suck that smoke up like crazy. I would use a chunk the size of a golf ball for wings, no more. Otherwise, charcoal does just fine on its own.

OK thanks. Have always used only lump so this is the first time I'm adding any wood. Would I add more than 1 small chunk when I do ribs also or am I good with about 3 come baby back timeJefferson .GA.Been egging since 1985 on a medium egg

You don't need much.....but ribs do not suck up the smoke like poultry and fish. Either way, pecan is not as strong as hickory, but it can still overpower things if you're not careful.
If you're in Georgia, stick with the peach wood for starters. Peach, Apple, Apricot, you can't go wrong.

For ribs I use 5 or 6 smaller chunks. I love lots of smoke though. Agree with the peach wood comment. I love peach for pork and chicken!!! Sweet and mild.XL BGE

I had to check two places today for wood chunks. Ace and home depot. Home depot had apple and ace had one small bag of pecan. Would like to find some peach chunks but don't know where to look. Any ideas? On who has chunks of wood. Both home depot and ace had Webber chunks so I'm sure I paid high dollar for them.Jefferson .GA.Been egging since 1985 on a medium egg

Like everything else, you can pretty much find any wood chunks on Amazon. I've gotten apple from there and I may order 5 pounds of peach.

I just throw a small handful of chips on the coals once temp is stabilized. Don't want a lot though.

Went by academy sports in Tuscaloosa today and they had chunks#:-) Apple, cherry, orange , peach ,pecan etc.... 8 dollars for a 10 pound bag. Picked up 10 pounds of peach. Anyone ever try Orange??Jefferson .GA.Been egging since 1985 on a medium egg

I have always heard to stay far away from citrus.As for pecan, I use hulls when I want a lighter flavor. They're readily available around here.Transplanted from Austin, Texas to Medina, Ohio

I did wings for the Super Bowl and used Rockwood with no smoke wood added.
The wings still had a pretty smokey taste, not overpowering but enough!
Poultry really sucks up smoke so go light!
