Second time doing ribs. Two racks, removed membrane, custom rub, sat in fridge for 24 hours. Set up LBGE for indirect with some hickory and apple chips. Cooked at 225-250 for 6.5 hours uncovered. Sauced w/ sweet baby rays for last 20 minutes at approx 300. Delicious and so easy. SWMBO crushed them. I'm getting skilled at temp control. Love this thing!!!
