Ethiopian Berbéré Chicken

The kit contains a sample of 20 spice blends.
Ethiopian Berbéré is one of the samples included in the kit and I used it to make a rub for bone-in chicken breasts. It is a blend of three chili peppers modified with a host of spices including ginger, black and green cardamom, fenugreek, allspice, adjwain, cassia buds and black pepper. This blend may be thought of as an aromatic Ethiopian paprika.
I crushed the blend in a mortar and added some salt and sugar. I then coated some chicken breasts with it. 45 minutes @ 425F indirect.
I will do it again for sure and will also try on pork chops and tenderloin.
