Started some bacon today

Options
Second attempt at bacon but my first to be cold smoked. Used the ruhlman recipe with a few changes. No juniper berries. Used dark molasses and brown sugar (with a touch of knob creek) as the sweetener. Used Insta-Cure #1 and kosher salt. Will be cold smoking in my new a-maze-n smoker using 100% hickory pellets. Doing a 7 day cure. 11.5 lbs of belly to start with. Sorry for upside down pics. Keep forgetting to hold iPad the other way.

    Cold smoke is the only way. I did that same recipe . Smoke for 10 hours with that amaze. They turned out great. I'm starting a vanilla Bourbon cure in a few dags
