Bacon Jalapeño Dip

Made this for friends the other night.
Cream cheese, sour cream, bacon, onion, jalapeño, tomato, scallions, garlic, spices, old cheddar, canned childs and more bacon. Smoked on the egg for 20 mins or so. Great dip. Better details available if anyone wants.

    1 package cream cheese
    1 cup sour cream
    5 + 2 strips of bacon cut in a thin julienne.
    1/4 sweet onion diced
    1 jalapeno small dice
    1 small tomato seeded and diced
    2 scallion chopped
    1 tsp sambal oleke or other garlic chili paste for a bit of heat but leave out if you don't want heat.
    1/4 lb of old cheddar, grated
    clove of garlic, minced

    Spice are mostly to taste but roughly...
    1/4 tsp or so of dried cumin
    1/4 tsp or so of garlic powder
    1/ tsp or so of paprika
    1/4 tsp or so of chipotle chili powder

    Cream the cream cheese and sour cream together.  Fry the bacon until it's almost crispy and then add the onion and fry until translucent.  Chop the jalapeno and toss it and the garlic in and turn off the heat, stir to soften the pepper.  Add to the cheese mixture.  Add spices and mix. Fold in tomato and scallions.  Add sambal oleke if using.
    Spread evenly in heat proof dish.  Grate old cheddar to cover.  Fry up 2 very thinly julienned strips of bacon.  Sprinkle on top, add canned chili peppers or jalapeno's to taste.
    I smoked this on the egg for about 20 minutes until bubbly with apple chips.  Smoke is pretty much optional, adds a bit but also makes clean up of the dish a lot harder.  Serve with any crackers you like.

    I've also done this with lump crab meat and Old Bay instead of the bacon, jalapeno and spices. Very nice too.  The Egg makes everything good...!
