Hair Dryer Peking Duck

I was planning to do Peking Duck for Christmas and in a bit of synchronicity saw an article on NPR about "cooking" a duck with a hair dryer. Of course it doesn't actually cook the duck, but about 10 minutes on high really dried it off and this had the crispest skin I've gotten yet.

I cooked the duck raised direct at 375 dome.

Served with scallion crepes, dipping sauce, green onions, fried rice and champaign.

Came out great, but sadly not much for leftovers
