Christmas Eve Butts

I smoked a 10lb and an 8lb butt for the family Christmas. Put it on at 11:00 pm Monday night and pulled it Tuesday about 3:00 with IT being 199. The dark bark came from some advice from my butcher at Sams by spraying it with Jack Daniels Winter Cider every hour or so. I injected with apple juice coated with Down and Dizzy and refrigerated for 24 hours. Let it get to room temp and on the Egg it went with apple wood for smoke. After pulling from cooler from rest I was surprised and concerned how dark the bark was, but when i went to pull it with my new Bear Paws thanks to my next door neighbor I was amazed at how tender it was not to mention the taste was spot on. This was the best butt yet….
