2nd Brisket Attempt

So I finally got down to Restaurant Depot and got a membership. I felt like a kid in a candy store... A very, very cold candy store. Anyway, I picked up a couple of butts for a Christmas dinner next week and an 8lb. Angus Brisket. The first brisket I did was very lackluster, tuff and dry. This one was much better... I trimmed off the hard fat, coated with rub, and put on the Egg at 225 for 18hrs. Pulled at IT 200 and it was a hit!

I'm assuming he was referring to a dome temp of 225. It's been my experience that this means about 215 or less at the grate. That would explain an 18 hr cook on an 8 pounder, I think. That brisket looks super moist!!!Dave - Austin, TX -

Looks great @jtippers. I am a brisket noob- is that a flat or a packer? Did you hit the one in Norcross or Atlanta?Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
