@Little Steven, I was just going to use the recipe from the BGE cookbook which does not use foie gras. My buddy is a chef and in an earlier conversation he recommended it because it is delicious. I've never had it, not have I ever made Wellington. Thanks for the tip on the duxelles.Mark Annville, PA
