Suckling Pig

We had a pig roast in September and roasted a 35 pounder over open fire. It was good but filipino friends said skin was skorched. I told my beach buddies, sitting on the beach of course, that I would cook the pig for new years eve and skin would have a bark that would be loved. 
Now, have I overstated my capabilities?????? I have slow cooked 26 lbs of pork but and it was great. Could I curl a 35 pound pig around on egg.
