Smoked up some fresh ham hocks tonight. Will be making beans and greens tomorrow. If you have not tried smoking your own fresh ham hocks, you're really missing out on some good flavor......I also smoked a rack of pork

How did you smoke the rack of pork? Low temp or hot and heavy smoke?Dunedin, FL

Temp was around 275.....I used Mesquite Charcoal and added Cherry Chips and Almond wood chunks
