Steak Recipe

Tried this recipe tonight, and it's really, really good. Give it a shot and see what you think.

Herb Crust

3-4 garlic cloves
2 tablespoons fresh thyme
2 tablespoons fresh oregano
2 tablespoons black pepper
1/2 cup chopped parsley
Zest from one lemon

Finely Chop all these ingredients

Salt the steaks generously, then drop them into the herb crust mixture. You want it on there thick.

Leave in the fridge for an hour

Get the Egg going - about 600 degrees, cast iron pan or dutch oven, with oil in the bottom

Throw the steaks in the cast iron pan once it's hot, cook about 2 1/2 minutes per side (quick sear)

Finish either on the egg (out of the pan), or in your oven.

    Sounds good. I bet saving a bit of the herbs for a board sauce would step it up even more.
