Leaping Frog Chicken

When I saw this recipe, I had to try it...the name was just so cool. The cut is a variation of spatchcocking...though after doing it I prefer the traditional spatchcock, this method seems to lead to overcooking the legs.

Served with tortillas and lemon wedges.
