Cooked the 3 - 1 - 1/2 method. These were a little thin - didn't have the blackstrap - so they didn't require as much time. They were wonderfully tender, not quite falling off the bone, but came away from the bone cleanly with a gentle bite.
Since there were no guests tonight we had beans, slaw and BP off sturdy disposable dinner plates. No fancy plating this time. Tasted just as good!
