Another paella question

One of the important thing seems to be even heat... Could you use the place setter?

    I do my Paella direct, just build a small fire.  Raising the grate will help also.

    From the picture I just don't see room for improvement man. God that looked good. Travis and I went to lunch today and lots of the conversation was about that dish of yours. Well that and how much better Pat could do than VI.
