Brisket is on

12.5 lb brisket just went on at 6:30. I set the Auber control to 220 deg. I am thinking it will be done between 9am and noon tomorrow. Does this sound about right?

Are you foiling? If not, it may be longer with the math of 1.5 hours for every pound. Just cook to temp though since meat has a mind of its own.

  • I'm keeping an eye out here. I'm putting my first 15 lbs brisket on around noon today. Good Luck.
