My first brisket!! Plenty of pics.
So I have my first brisket under my belt. Smoked with some oak wood. I was running around 275 for most of the cook trying to go hot and fast. The end product with regard to flavor was awesome. Unfortunately I think I pulled prematurely as the flat was pretty tough and not just super moist. Thankfully I had enough residual juice in the pan to make up for it. Good reviews all the way around from the family.
