Bone-in beef short ribs

Smoking some bone-in beef short ribs with apple wood chunks. Rubbed them with kosher salt, fresh ground black pepper, brown sugar, and chili de arbol. Never tried this before.

    How did they turn out? Just picked up a quarter of a beef and I now have short ribs to cook. Never done them before.
    L x2, M, S, Mini and a Blackstone 36. She says I have enough now....

  • The rub was perfect. But the texture of the meat was not. I think beef short ribs have to be braised. There's a recipe on Big Green Egg's website that starts them with smoke and finished them by braising. I think that's the way to go.

    The rub was simple and delicious. It will be my go-to rub from now on.
