Smoking some bone-in beef short ribs with apple wood chunks. Rubbed them with kosher salt, fresh ground black pepper, brown sugar, and chili de arbol. Never tried this before.

I hope you went light on the Chiles de Arbol. They are really hot !__________________________________________Dripping Springs, Texas.Just west of Austintatious

The rub was perfect. But the texture of the meat was not. I think beef short ribs have to be braised. There's a recipe on Big Green Egg's website that starts them with smoke and finished them by braising. I think that's the way to go.
The rub was simple and delicious. It will be my go-to rub from now on.
