Built my table yesterday and cooked my first meal to tonight. I cooked a Spatchcock chicken, baked potato and hot dogs for the kids. I used Dizzy Pig Tsunami Spin for the seasoning and apple wood for some smoke and cooked raised direct at 350. Everything turned out great. Chicken had just a hint of smoky and was the juiciest bird I have ever had. The potatoes where a little under done, next time I will wrap in foil after the first half hour, but they too had an awsome smoky flavor.
I think tomorrow I will have to try some ribs. So happy to be finally cooking.

Good first cook.
Spatch can easily handle 400 and still be just as tender and moist. Did one last night with green beans cooked under the bird. Amazing.
