Bobby Flay's Method of Ribs

I saw a show with Bobby Flay cooking ribs on the XL egg. He put the water pan on top of the coals, THEN the plate setter on top of the water pan, etc. Has anyone ever done that? I always put a water pan on top of the plate setter.

I have a hard time seeing the point of putting the water pan on the coals directly.

That does just sound silly.  It would either burn up the water very quickly because it is so hot on the coals...or perhaps the pan just smothers the fire.

He must be use to using a water smoker.  It's easy to make great ribs on an Egg without a water pan.

only time i put a water pan in the egg is when making bread for the flash of steam when the loafs go in, i like the idea for that putting the pan right on the coals. i do like the way bobby caramelizes the sauce at the end of the cook over a higher heat, that parts worth doing. his method also involves slaming the dome down onto the base
