First foray in the world of smoking. Got a Large BGE for my birthday! This was last weekends feast. Tasted as good as it looks. Not bad for my first time
St. Louis Style Pork Spare Ribs...
225-250 ish. Method ended up being 2.5/2.25/.5. Homemade rub to start, mid way wrapped in foil with Apple Juice/Honey/Brown Sugar. Last 15 min or so applied a couple layers of Think Bone Suckin Sauce. No other attempts to compare it to but it was pretty tasty!

Looks awesome! FWIW, drip pans not only catch the drippings and prevent flare ups, but they also protect the plate setter from getting facials.
