Grilled Potato and Cucumber Salad

This turned out really well. Took small and medium red potatoes and boiled until they just started to get fork tender. Drained, halved, brushed with EVOO, sprinkled with S&P. Grilled raised direct until they have nice grill marks and a bit of texture.

Cut up cucumber, thinly sliced half of small red onion, and minced about 1/4 cup parsley.

The dressing was:
1/2 cup light mayo
2 tbs red wine vinegar
1 tbs sugar
1 ts Dijon mustard
1 ts celery seeds
2 ts garlic
1/4 cup canola oil
Pinch crushed red pepper
Oregano

Whisked everything but the oil together and then coded in the oil.
