Is it supposed to look like this?

I will be doing my first spatchock chicken tonight (2 birds using the upper and lower grids). Hoping for crispy skin I followed the advice to let birds sit in the fridge overnight. One post said the birds will "look funky" the next day. Well, they do in fact look funky and I just wanted to confirm this what I should be seeing with the skin taking on an odd color..

  • Yep that's right on it as the others mentioned.  Are you going to go direct or indirect for the cook?  I like to cook mine breast down the last 30 minutes direct to get the skin nice and crispy.  I hope it turns out well.  It's become my favorite way to do chicken
