    mule,
Try Dr BBq's Peachy Stuffed Pork Chops out of his new book if you have it. I tried them Saturday when he cooked them at our store. They were excellent!

<p />mule,[p]You can't go wrong with a simple salt, pepper, and olive oil rub. Use a sear, rest, and roast approach since they are thick (I'm assuming at least 1.5"??).[p]Lately I've also been using "CharCrust," which makes a great crust too. If you have them, throw on some guava wood chunks for a devine compliment.[p]5-6chop2.JPG[p]Make sure to pull them off the Egg around 140 internal.[p]Good luck![p]TRex

    mule,
if they are bone in, i like them trexed to an internal of 142,then rested under a loose foil. salt, pepper, fresh rosemary and oil rubbed in.
if there boneless, these are good

GrillMeister,[p]Thanks, Ed. I did hate to miss the Big Event, but it was really hard to complain while looking at things like this:[p]sunset4.JPG[p]It's also amazing how much choppier the ocean is at night. ;-)[p]Cheers,[p]TRex[p]P.S.
